Title: Roast Beef with Horseradish Sauce

Yield: 12 Servings

3lbBeef eye or round roast
1/2tsDried marjoram
1/4tsDried thyme
1/4tsPepper
1/8tsGarlic powder
HORSERADISH SAUCE
8ozReduced fat sour cream
1/2cFat free mayonnaise
1tbPrepared horseradish
1tsBeef bouillon granules
1 Clove garlic,pressed

This recipe is for a 3 1/2 quart slow cooker.

Trim fat from roast. Combine seasonings in a small bowl and rub mixture over entire surface of roast, place in slow cooker. Cover and cook on HIGH 4 to 5 hours or on LOW 8 to 10 hours. Let stand 15 minutes. Cut diagonally across grain into thin slices. Serve with Horseradish Sauce.

Horseradish Sauce - combine all ingredients, cover and chill. Makes 1 1/2 cups of sauce.
